What’s got home bakers bringing back the centuries-old banneton proofing basket tradition? They’re a beautifully simple way to add the authentic artistry of breadmaking to your homemade breads. The rattan proofing basket with natural linen liner supports your fresh-made Thermomix dough during the fermentation process, giving your bread a uniform shape and imprinting a decorative ridged pattern on your crust.
Of course, before these beauties made it into our home breadmaking collection they had to prove themselves in the Thermomix kitchen. We gave our Recipe Development team a big selection of bread proofing baskets to test and these were the clear winners, turning out sensational rustic sourdough, rye and pane di casa!
Made of strong, reusable, natural and durable rattan, each proofing basket size holds a generous amount of dough, shapes it perfectly evenly, and consistently turns out a beautifully hand-crafted loaf or baguette. We also added a custom-fitted natural linen liner that whisks away excess moisture from your dough for a smoother, crispier crust.

Be sure to flour your bread proofing basket before popping your dough in to prove. Our Recipe Developer Isa recommends the Thermomix bowl brush for brushing flour out of your bread proofing basket after use.
Before first use, lightly spray your new rattan proofing basket with cooking oil, dust with flour and gently tap the back of the proofing basket with your hand to remove excess flour. Repeat this before each use, if required.
To keep your bread proofing basket clean, pristine and mould-free, be sure to brush your basket every three to four weeks with a clean, dry brush. Our Recipe Developer Isa recommends the Thermomix bowl brush for brushing out flour.
At least once every six months, give your proofing basket a thorough handwash, using a brush and warm water, then place in your oven to dry for 20 minutes at 120-130°C/250-270°F before cooling to on a rack to completely dry out. Avoid piling them up or placing in plastic bags and containers when they’re damp and store in a cool dry place.
To clean the linen proofing basket liner, handwash in cold water and hang to dry in the shade.
Use only for the fermentation and proofing stage, not for baking your bread in the oven.
