Three ways to pimp your roast chicken

The best roast chicken is juicy on the inside with golden, crispy skin on the outside.

A roast chook is the gift that keeps on giving – pan juices make a rich gravy, while the bones can be turned into a stock, forming the basis of another meal. It’s versatile too, keep it traditional with a lemon and garlic butter chicken served with roasted vegetables, or mix it up with a spice rub, then carve up your chicken into pieces on a grazing board served with pita wraps, salad and dip like we did on our Facebook live (you can catch the replay here).

Here are three of our favourite spice rubs and marinades to mix it up when you’re roasting your chook.

 

Gyro spice mix

  • 10 g chilli powder
  • 10 g ground coriander
  • 5 g ground paprika (sweet or hot)
  • 10 g ground cumin
  • 5 g garlic powder
  • 10 g dried parsley
  • 5 g dried oregano
  • 5 g dried thyme
  • 1 tsp ground cinnamon
  • 1 tsp salt

Combine all ingredients together in a bowl. Mix half the spice rub with 2 tbsp olive oil before coating your chicken.

Five spice rub

Organic Chinese Five Spice in a Bowl

  • 1 tbsp olive oil
  • 2 tsp instant granulated coffee
  • 2 tbsp brown sugar
  • 2 tsp ground allspice
  • 2 tsp dried oregano
  • 2 tsp ground paprika
  • ½ tsp ground black pepper
  • ¼ tsp cayenne pepper
  • 1 tsp sea salt flakes

Combine all ingredients and coat chicken liberally.

Turmeric lime marinade

  • 1 stalk lemongrass, white part only, cut into pieces (3 cm)
  • 1 tsp salt
  • 1 tbsp white sugar
  • ½ tsp ground black pepper
  • ½ tsp Chinese five spice powder (see Tips)
  • 1 tsp dried chilli flakes
  • 4 fresh Kaffir lime leaves
  • 4 garlic cloves
  • 1 eschalot
  • 1 tsp sesame oil
  • 20 g vegetable oil
  • 1 tbsp fish sauce

Place turmeric and lemongrass into mixing bowl and chop 10 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Add remaining ingredients and chop 10 sec/speed 7. Transfer into a bowl until ready to use.
