Less Waste, More Food
Great Resource, full of hints and tips plus recipes
Multi-award winning cookbook in the Australian Gourmand Cookbook Awards 2022. While laden with beautiful, creative dishes and show-stopping food photography, Less Waste More Food with Thermomix® is more than just a cookbook. An official Thermomix® cookbook, Less Waste is a guide to enriching and enjoying a new low impact approach to food. You’ll learn how you cook, shop and plan your meals to use the whole ingredient and how, with Thermomix® on your kitchen bench, you can save time and money while you do so.
At the front of the book, you’ll find expert tips on how to deck out a low-waste kitchen, how to plan your pantry and shop and grow in season. We have even included sections on how to compost, no matter the space you have at hand, and setting up a ‘G-I-Y’ (Grow It Yourself garden, veggie patch or series of pots).
The recipe chapters are categorised by food groups rather than types of recipes, with the aim to help you plan your meals based on the ingredients you have on hand or what’s abundant and in-season. We’ve also included flavour combination inspiration and ideas for substituting out ingredients, as well as other delicious recipes to try out from Cookidoo® (our online recipe platform).
The chapters are:
The more we are able to cook from scratch and plan our meals with wholefood in mind, the more we find we organically buy less packaged foods. With Thermomix® in the kitchen and Less Waste to provide inspiration, you’ll have all you need to enjoy a greener approach to cooking and enjoying meals with your friends and family.
Individually, our incremental and conscious changes to our food choices all make a difference. But together, that’s where we really start to make a ripple and positively impact the legacy we’ll hand over to future generations. The creation of this book is our way of helping our community get a head-start and still enjoy deliciousness together, while knowing we are doing what we can to leave a greener footprint.
For further inspiration, take a look at our Thermomix® Australia and New Zealand YouTube Channel Less Waste playlist, where you’ll find videos from various experts amongst our community.
So much about Thermomix® lends itself naturally to a low-waste approach to life. Not only does it make cooking from scratch with real ingredients so much quicker and easier, but the product itself is also built to last – and Thermomix® TM6 gets even better with age. In Less Waste, More Food with Thermomix®, you’ll find 70 recipes designed to cleverly use up leftovers and make the most of all parts of the ingredient. You’ll also find great tips on growing your own, composting and more.
Whether you’re just getting started with a sustainable approach to cooking or you’re already in full flight, you’ll find so much to inspire you.
No waste veggie Bolognese
A TM6 ‘exclusive’ recipe using High Temperature mode, the beauty of this recipe is it is so versatile and tastes just as good as the traditional minced beef version. The lentils can be swapped with whatever legumes are in your pantry and we bulk it out with the nutrient dense vegetable peelings saved over from other recipes.
Don’t knock it ‘til you try it! It’s a great sauce to make ahead and pop in the freezer. Serve with pasta, with zoodles, mashed potato, as a filling for lasagne or with a baked potato. It’s also delicious on its own with some crusty bread. For added flavour, top it with a spoonful of the Carrot Top Pesto from the book too.
As a TM6 recipe, you’ll find the recipe steps to follow-through in Guided Cooking on Cookidoo®.
Whey bread with soft cheese (TM6 RECIPE)
We all know that with Thermomix® in the kitchen, we can easily create recipes we’d never dreamed of before. This is an example of just that, using the Fermentation Mode unique to TM6, you make soft cheese and then use the whey created from that process to make bread. So delicious, so easy and such an incredible win in the low-waste stakes too, not to mention the money saved.
Aperol® & lemon sour
Who says a low-waste approach to food and recipes can’t provide that ‘wow’? This recipe is a total show-stopper in both the flavour and presentation categories. We love it because it uses up the aquafaba (canned chickpea liquid) which otherwise we would often discard. Check out the Aquafaba meringue kisses recipe also for another creative way to use up this part of the ingredient.
Carrot top pesto
You’ll find this recipe as part of our Virtual Cooking Class, which you’ll receive as your special gift with purchase of the book. It’s a beautiful, rich pesto which is ideal as a stir-through pasta sauce, a dip or an extra dollop of flavouring for soups, stews, pizzas or anything else that takes your fancy. In the class, we also share a simple yet delicious way of using up the carrots themselves too.
Yum! Honestly, who can resist deep fried morsels of moist chicken with a season southern-style crumb? This salt and spice rub is the ideal way to dress up parts of the chicken some fussy family members may not usually want to eat. Forget buying chicken tenderloins or thighs and buy the whole chook, then portion it and coat it in this deliciousness for what will no doubt become a family favourite. See our video on Thermomix® Australia and New Zealand YouTube for how to portion a whole chook if you’d like to learn this new skill.
