The recipe chapters are categorised by food groups rather than types of recipes, with the aim to help you plan your meals based on the ingredients you have on hand or what’s abundant and in-season. We’ve also included flavour combination inspiration and ideas for substituting out ingredients, as well as other delicious recipes to try out from Cookidoo® (our online recipe platform).

No waste veggie Bolognese
A TM6 ‘exclusive’ recipe using High Temperature mode, the beauty of this recipe is it is so versatile and tastes just as good as the traditional minced beef version. The lentils can be swapped with whatever legumes are in your pantry and we bulk it out with the nutrient dense vegetable peelings saved over from other recipes.
Don’t knock it ‘til you try it! It’s a great sauce to make ahead and pop in the freezer. Serve with pasta, with zoodles, mashed potato, as a filling for lasagne or with a baked potato. It’s also delicious on its own with some crusty bread. For added flavour, top it with a spoonful of the Carrot Top Pesto from the book too.

Whey bread with soft cheese (TM6 RECIPE)
We all know that with Thermomix® in the kitchen, we can easily create recipes we’d never dreamed of before. This is an example of just that, using the Fermentation Mode unique to TM6, you make soft cheese and then use the whey created from that process to make bread. So delicious, so easy and such an incredible win in the low-waste stakes too, not to mention the money saved.
Aperol® & lemon sour
Who says a low-waste approach to food and recipes can’t provide that ‘wow’? This recipe is a total show-stopper in both the flavour and presentation categories. We love it because it uses up the aquafaba (canned chickpea liquid) which otherwise we would often discard. Check out the Aquafaba meringue kisses recipe also for another creative way to use up this part of the ingredient.
Carrot top pesto
You’ll find this recipe as part of our Virtual Cooking Class, which you’ll receive as your special gift with purchase of the book. It’s a beautiful, rich pesto which is ideal as a stir-through pasta sauce, a dip or an extra dollop of flavouring for soups, stews, pizzas or anything else that takes your fancy. Southern-style chicken
Yum! Honestly, who can resist deep fried morsels of moist chicken with a season southern-style crumb? This salt and spice rub is the ideal way to dress up parts of the chicken some fussy family members may not usually want to eat. Forget buying chicken tenderloins or thighs and buy the whole chook, then portion it and coat it in this deliciousness for what will no doubt become a family favourite.
