No matter if it’s for lunch or dinner, there’s nothing more nourishing than a hearty, healthy soup. It’s no wonder then that our Pumpkin Soup is the most popular soup recipe on Cookidoo, our online Thermomix recipe library.
Adding crunchy soup toppers is also a great way to turn a humble bowl of soup into a satisfying main meal and take it to the next level of deliciousness. It’s the cherry on top of your sundae.
Below we’ve mixed and matched our favourite flavour-boosters to create three tempting topping combinations.
Tasty topping #1
It’s our firm belief that Lemon Feta should be at the ready in every refrigerator. So why not dollop on top of your pumpkin soup! You’ll find this recipe as part of the Chilli Beef with Lemon Feta in our Everyday Cooking with Thermomix Families cookbook. Or right here at Cookidoo.com.au.
Before you dip your spoon into your bowl, why not drizzle with some of our Chunky Basil Pesto too?
Top tip: Cut your pumpkin into small, even pieces and take the skin off harder pumpkin types.
Tasty topping #2
Add a generous swirl of Coriander Pesto and a drizzle of Jalapeno Oil (borrowed from our Watermelon Gazpacho recipe). Top with some chopped jalapenos and coriander leaves for some extra freshness and crunch.
Top tip: Make sure your vegetables are fully cooked to ensure an even blend – ideally, chop the vegetables to a salad consistency so they cook faster and puree more easily
Tasty topping #3
Spice up your Pumpkin Soup with a dollop of Sambal Oelek, a drizzle of coconut cream and a dash of chopped peanuts, and you’ve got the recipe for some tasty toppings!
Top tip: Stick to the maximum level of the bowl, don’t be tempted to add ‘just one more carrot’
