Rattan Proofing baskets, or banneton, are popular in artisan baking. They support the dough while it rises during the fermentation process, giving a uniform shape and they allow the distinctive ridge of the basket to imprint on the crust. This results in a beautiful, hand-crafted loaf that looks like it sells for a small fortune at specialised bakeries 🥖
We gave our Recipe Development team a selection of proving baskets to test and these were the clear winners. They hold a big 1.25kg dough and their shape resulted in an attractive loaf that baked beautifully - and was delicious!!
We now offer a choice of lined or unlined baskets. Our custom-fitted fabric lining whisks away extra moisture from your dough, resulting in a smooth and crispy crust. It's the best of both worlds as you can opt to use with the liner or without. 🤷🏼♀️
It is made of rattan, it's a strong, natural and durable material, and can therefore be reused at will.

Love this basket, used many times. Liner is useless order without it. I’m here to buy the oval, better than bread pans. Very happy, and never sticks. Read prep instructions. Very highly recommend these baskets.

As described and works well
Would give it a minus. We can not get the loaf out!!! . We have oiled and floured but no luck. I bought two, one for us and the other as a gift . Will not be able to do that as we feel they will have just as much trouble as we do . Wish we could return and get money back as we feel the product does not do what it should
Oh no Marilyn it sounds like there might be too much water in your dough! If your dough doesn't have enough flour, it can get really sticky and will get stuck to the basket. I would try placing a tea towel into the basket (and flouring the tea towel) or adding extra flour into your mix. This should help for next time. Hope that helps!
Basket in shop comes with a cover but no cover received with basket. Should be stated that cover not included when advertising
Oh no Monique it looks like you might have purchased the wrong basket. We offer different variants for this basket as some customers prefer not to have the lining. I have asked our Customer Service team to get in touch with you regarding this so you should be able to swap your basket for the one you would prefer. Hope that helps!
