Experiment with cedar planks and wraps. They add a natural, smoky flavour to a variety of foods including seafood, meats and vegetables. Tip: Soak your planks in water for 1 hour before use and avoid placing directly onto a heat source. Get smoking with the Middle Eastern Planked Salmon.

But after removing your meat from the grill, let it sit for a few minutes. This seals the juices and keeps the meat from drying out.
